Crawling Cucumber Boats 🐛🚤
Complexity Level: Easy Peasy (with a sprinkle of Adult Assistance)
Adult assistance is needed for cutting the cucumbers.
Ingredients:
- 2 medium cucumbers (the best boats out there!)
- 1 cup cooked rice (your choice: white, brown, or even wild!)
- 1 can chickpeas (the crunchiest little buddies)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika (spice it up!)
- Salt and pepper to taste

- 2 tablespoons tahini (goes with everything!)
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup (to sweeten the deal)
- 1 tablespoon rice vinegar
- A splash of chili garlic sauce or sriracha (for those who like it spicy!)
- A pinch of love and fun (the secret ingredient that makes everything better!)
Instructions:
1. Prepare Your Cucumber Boats!
- Ask an adult to slice the cucumbers in half lengthwise (they’ll look like little green boats!). If they need a stable surface, shave off a tiny strip from the bottom side so they don't rock and roll!
2. Scoop the Seeds!
- Use a spoon to scoop out the seeds—create a cozy little space for the filling (just like bugs need their cozy homes!). Save the seeds to add to a smoothie later!
3. Crunchy Chickpea Assembly!
- Preheat the oven to 375°F (190°C).
- In a bowl, combine chickpeas, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss them until they are all coated. Time to get crunchy!
- Spread them on a baking sheet and bake for 30 minutes until golden and crispy (just like crunchy insect snacks, minus the wings!).
4. Mighty Sauce Mixing!
- While the chickpeas are crunching away, whisk together tahini, soy sauce, maple syrup, rice vinegar, and chili garlic sauce in a bowl until thick and creamy. Add a splash of water to get the right drizzle consistency.
5. Filling the Boats!
- Once the chickpeas have cooled off, mix the cooked rice and a sprinkle of the chickpeas together in a bowl (the best buddies come together!).
- Stuff each cucumber half with the rice-chickpea mix, pressing gently to make room for more (just like ants packing their food!).
6. Drizzle and Decorate!
- Drizzle the mighty sauce over your stuffed cucumbers and sprinkle some more chickpeas on top for extra crunch (the finishing touch on these buggy vessels!).
