Bubbling Buzzing Bee Pudding Bliss 🐝🌞

Ingredients

  • 8 ounces of cream cheese, at room temperature (for a creamy buzz!)
  • 1 (8-ounce) container of frozen whipped topping (think fluffy bee clouds)
  • 1 cup of sliced almonds (you'll want some crunchy "bee wings")
  • 12 whole graham cracker sheets (for the buzzing base!)
  • 1/2 teaspoon kosher salt (just a pinch to keep it balanced)
  • 6 tablespoons of unsalted butter, melted (the sticky glue for our hive)
  • 1 1/2 cups of cold milk (to make it nice and creamy!)
  • 1/4 cup of honey (the superstar ingredient!)
  • 1 (3.4-ounce) box of instant vanilla pudding mix (for that sweet bee buzz!)

Instructions

Toast the Bees’ Favorite Snack! 🔥
Heat a skillet over medium heat. Toss in 1 cup of sliced almonds and toast them for about 5 minutes until they’re golden brown and smelling nutty. Transfer to a small plate and let cool. (Be careful not to burn them—bees don’t like burnt snacks!)

Make the Buzzing Base! 🐝
In a food processor, break those 12 graham crackers into bits. Add half of your toasted almonds and 1/4 teaspoon of kosher salt. Pulse until fine crumbs form, resembling tiny bee dust! 🐝✨
Drizzle melted butter over the crumbs and pulse again until it looks like wet sand. Press this mixture into the bottom of an 8x8-inch baking pan. Pop it in the fridge while we make our buzzing cream!

Create the Creamy Hive! 🌼
In that same food processor (no need to wash it—more bee magic!), combine room temperature cream cheese, 3/4 cup of cold milk, 1/4 cup of honey, and the remaining 1/4 teaspoon of salt. Blend it until it’s super smooth, like quick bee wings!
Now, add 3/4 cup more cold milk and the box of instant pudding mix, mixing until it's smooth. Let it sit for about 5 minutes to thicken into a fluffy cloud!

Fold in the Fluff! 🎉
Gently fold in 1 cup of thawed whipped topping with a spatula. This is where our bee pudding gets its fluffy, creamy texture—just like a soft bee's belly!

Assemble the Buzzing Delight! 🍯
Spoon the cream cheese mixture over the chilled graham cracker crust and spread it around evenly. Then dollop the remaining whipped topping on top and smooth it out. Cover and refrigerate for at least 4 hours (or overnight if you can wait!) to let it set into a delightful bee treat.

Before serving, sprinkle the remaining toasted almonds on top and drizzle more honey like the golden nectar it is!
