Glowworm Gelato: A Shining New Delight!

Why did the glowworm turn down the job offer? It didn't want to be in the spotlight!

Today, we're bringing you a recipe that shines as brightly in flavor as its namesake does in appearance. Introducing Glowworm Gelato, a shining new delight that promises to light up your dessert game like never before. And don't worry, no real bugs were harmed in the making of this recipe!

Ingredients:

  • 2 cups of whole milk
  • 1 cup of heavy cream
  • 3/4 cup of sugar, divided
  • Pinch of salt
  • 4 large egg yolks
  • 1/2 teaspoon of vanilla extract
  • 2 tablespoons of lime zest
  • 1/4 cup of fresh lime juice
  • Green food coloring (just enough to achieve that glowworm hue)
  • Edible glitter or shimmer powder, for that glowworm sparkle

Instructions:

  1. Begin by whisking together the milk, heavy cream, half of the sugar (3/8 cup), and the pinch of salt in a saucepan over medium heat. Stir continuously until the mixture is warm and the sugar has dissolved completely.
  2. In a separate bowl, whisk the egg yolks with the remaining sugar until the mixture becomes thick and pale in color.
  3. Gradually temper the egg yolks by adding a small amount of the warm milk mixture to the yolks, whisking constantly. Once the yolks are warmed, pour them back into the saucepan with the remaining milk mixture.
  4. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. This usually takes about 5 minutes. Be careful not to let the mixture boil.
  5. Remove from heat and strain through a fine sieve into a bowl. Stir in the vanilla extract, lime zest, and lime juice.
  6. Add green food coloring a drop at a time, stirring well after each addition, until you achieve the desired glowworm color.
  7. Cool the mixture quickly by placing the bowl in an ice bath and stirring occasionally. Once cool, cover and refrigerate until thoroughly chilled, about 2 hours or overnight.
  8. Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions.
  9. Once the gelato is churned, fold in the edible glitter or shimmer powder to give it that signature glowworm sparkle.
  10. Transfer the gelato to a freezer-safe container and freeze until firm, at least 4 hours or overnight.
