Before your imagination runs wild with images of chasing tiny insects around, let's be clear: no real bugs were harmed in making this recipe! Our fleas are actually black beans and our quail is a tender, spiced chicken that together create a quesadilla that's both hearty and whimsical.

Ingredients

  • 2 cups shredded cooked chicken (our stand-in for quail)
  • 1 cup black beans (our delightful fleas)
  • 1 cup shredded cheese (a mix of cheddar and Monterey Jack works wonders)
  • 2 tablespoons taco seasoning
  • 4 large flour tortillas
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced green onions
  • 1/2 avocado, diced
  • Sour cream, for serving
  • Salsa, for serving
  • Lime wedges, for serving

Instructions

  1. Prep the Filling: In a medium bowl, mix together the shredded cooked chicken with the taco seasoning until the chicken is well coated. Then, stir in the black beans.
  2. Assemble the Quesadillas: Lay out the flour tortillas on a flat surface. Sprinkle a quarter of the cheese over half of each tortilla. Top the cheese with the chicken and bean mixture, then add diced tomatoes, cilantro, and green onions as desired. Fold the tortillas over to close.
  3. Cook: Heat a skillet over medium heat. Once hot, place a quesadilla in the skillet and cook until the bottom is golden and crispy, about 2-3 minutes. Carefully flip over and cook the other side until crispy and the cheese is melted. Repeat with the remaining quesadillas.
  4. Serve: Cut each quesadilla into three wedges. Serve with diced avocado, sour cream, salsa, and lime wedges on the side.
