Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup xylitol (a sweetener derived from birch trees, fitting our bug theme)
  • 1/4 cup unsweetened shredded coconut
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • For decoration:
  • Licorice strings (cut into small pieces for the antennae)
  • Chocolate chips or raisins (for the eyes)

Instructions

Prepare the Dough

  1. In a large mixing bowl, whisk together almond flour, coconut flour, xylitol, shredded coconut, baking powder, and salt.
  2. In another bowl, beat together the egg, melted coconut oil, and vanilla extract until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. If the dough is too dry, add a tablespoon of water to reach the desired consistency.

Shape and Bake

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll the dough into small balls, approximately the size of a walnut, and place them on the baking sheet.
  3. To create a bug-like appearance, gently press down on each dough ball to flatten slightly. Use the chocolate chips or raisins to make the eyes and insert pieces of licorice as the antennae.
  4. Bake for 8-10 minutes or until the edges start to turn golden brown.
  5. Allow the treats to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
