Ingredients
- 1 can (15 ounces) of chickpeas, rinsed and drained
- 1/4 cup lemon juice (about 1 large lemon)
- 1/4 cup well-stirred tahini
- 1 small garlic clove, minced
- 2 tablespoons olive oil, plus more for serving
- 1/2 teaspoon ground cumin
- Salt to taste
- 2 to 3 tablespoons water
- Dash of ground paprika, for serving
- A few sprigs of fresh parsley, for garnish
- Black and green olives, for the hoppers
- Carrot sticks or cucumber slices, for serving
Instructions
- In a blender or food processor, combine the chickpeas, lemon juice, tahini, garlic, olive oil, ground cumin, and salt. Blend until smooth.
- Add water as needed to achieve the desired consistency.
- Taste and adjust seasoning, adding more salt or lemon juice if needed.
- Transfer the hummus to a serving bowl and create a shallow well in the center with the back of a spoon.
- Drizzle with additional olive oil and sprinkle with paprika.
- To make the olive hoppers, slice the olives in half. Use one half for the body and slice the other half for the legs. Place them on top of the hummus, arranging them so each one looks like a little bug ready to hop away.
- Garnish the hummus with fresh parsley sprigs around the hoppers to add a touch of greenery.
- Serve with carrot sticks, cucumber slices, or your favorite dippers.
