Remember, no real bugs were harmed in the making of this recipe; we’re all about celebrating our six-legged friends in the most delicious and humane ways possible!

Ingredients:

For the Dragonfly Bodies:

  • 1 cup of your favorite hummus (this will be the base of the dip)
  • Blue food coloring (to give our dragonfly bodies a magical hue)

For the Wings:

  • 4 large radishes (these will serve as the wings of our dragonflies)
  • 1 cucumber (sliced into thin strips for additional wing decorations)

For Decoration:

  • Black olives (for the eyes)
  • Carrot sticks (for the antennae)
  • Sliced almonds (optional, for extra texture on the wings)

For Dipping:

  • Assorted vegetables (carrots, bell peppers, celery sticks, etc.)
  • Pita bread or crackers

Instructions:

  1. Mix your hummus with a few drops of blue food coloring until you reach a shade of blue you’re happy with. This will be the body of your dragonfly. Spread the humuslim evenly on a large serving plate.
  2. Prepare the radishes by slicing them into thin slices; these will be your primary dragonfly wings. Arrange four slices on each side of the humuslim body to form the wings.
  3. Use the cucumber slices to add additional layers to the wings. Place these just below the radish slices to give a more dimensional look.
  4. For the eyes of your dragonfly, halve black olives and place them at the front of the humuslim body.
  5. Carrot sticks will be the perfect antennae. Stick two pieces into the humuslim body at the head of your dragonfly.
  6. If you opted for sliced almonds, you can now add them to the wings for added texture and a bit of a crunch.
  7. Surround your dragonfly dip with your chosen veggies and pita bread or crackers for dipping.
